Banana Pecan Bread with a Brown Sugar Pecan Glaze

Perfect morning and night bread to eat with your coffee of the day!

Ingredients:


Bread:

  • 1 3/4 cup of flour

  • 1 1/2 cup of sugar

  • 1 teaspoon of vanilla

  • 1/4 cup + 1 tablespoon of evaporated milk

  • 1/2 cup of oil

  • 2 eggs beaten

  • 1 teaspoon of baking soda

  • 2 over-ripe bananas mashed (if they are SUPER ripe, 3 is fine too)

  • Pecans (as many as youd like :) )

Glaze:

  • 3/4 cup of brown sugar

  • 1/2 a tablespoon of butter

  • 1/4 cup of water

  • Pecans (as many as you'd like!)

Steps:


Bread:

  1. Beat eggs with the vanilla, baking soda, milk, and oil.

  2. Gradually add the sugar, and beat until smooth.

  3. Add the flour and beat to a light mix.

  4. Add bananas and beat till completely mixed.

  5. Butter your loaf tin and sprinkle with flour.

  6. Add your batter into the pan.

  7. Bake at 325 degrees F for 60 - 80 minutes.

Glaze:

  1. In a sauce pan, add the brown sugar, butter, and water

  2. Constantly stir over medium heat

  3. Once it starts to boil/bubble, remove from the heat

  4. Add the pecans and mix them in

  5. Pour over your cooled bread

I like to leave my banana bread over night to cool the glaze, and then its ready to be devoured the next day :)
